India is one of the world’s largest producer and consumer of ginger. The top ginger-producing states in India are Madhya Pradesh, Karnataka, and Assam. In the year 2023, the estimated production of ginger in India has increased to 2.43 million tons of 2021, India is known to produce almost 43% of the total ginger production in the world. Several cultivars of ginger are grown in different ginger growing areas in India, and they are generally named after the localities where they are grown. Some of the prominent indigenous cultivars are Maran,Kuruppampadi, Ernad, Wayanad, Himachal and Nadia Popular Variety Ing Makhir, IISR-Mahima, and IISR Rajatha .

Ginger is a widely used spice and medicinal root known for its strong, aromatic flavor and numerous health benefits. It comes from the rhizome of the Zingiber officinale plant and is used in fresh, dried, powdered, or oil form across various cuisines and herbal remedies.
